I call these my Hunter-Gatherer Muffins because I hunted all throughout the kitchen and gathered everything I could find that fit my hubby’s Paleo Diet requirements. Here’s what I found:
Ingredients
- 2 1/2 cups Coconut Flour
- 2 tsp. + 1 tsp. Cinnamon
- 1/2 tsp. Sea Salt
- 2 Tbsp. Flax Meal
- 2 cups Carrots, grated
- 2 small or 1 large Apple, cored and grated
- 1 Tbsp. Orange Zest
- 3/4 cup Unsweetened Coconut, shredded or roughly chopped
- 1 cup Raisins
- 5 Eggs
- 1 cup Coconut Milk
- 1/2 cup Olive Oil
- 1 tsp. Vanilla
- 1 Tbsp. Apple Cider Vinegar
- 2 Tbsp. Honey
Directions
Preheat the oven to 350 F. Grease a muffin pan.
Combine coconut flour, 2 tsp. cinnamon, sea salt, and flax meal in a large bowl. Put the carrots and apple in a food processor to grate.
Add carrot, apple, orange zest, coconut, and raisins to the dry mix. Combine well.
In a medium bowl, whisk eggs, coconut milk, oil, vanilla extract, and apple cider vinegar together. Next, incorporate the wet ingredients into the dry ingredients. Mix well.
Spoon the batter out into muffin pan and bake for 45 minutes.
Warm up honey and remaining 1 tsp. cinnamon, drizzle on top of each muffin.
Cool muffins in the pan for 8-10 minutes and then remove to a rack to finish cooling.
